Use a grain bag to immerse the grain in 1.5 gallons of 155° water, slowly adjust temp to 152° and hold for 45 minutes. Raise temp to 158° and hold for 15 minutes. Sparge with 1.5 gallons of 170° water. | ||||||||
Boil: | 30 minutes | SG 1.050 | 6.5 gallons | |||||

This is a short-boil beer! After sparging, add extract and stir until dissolved. Bring to a boil. After hot break, add first hops addition and boil for 20 minutes. | ||||||||
Hops: | 3 oz. Columbus (aka Tomahawk) (13% AA, 20 min.) 1 oz. Kent Goldings (5% AA, 10 min.) 1.5 oz. Kent Goldings (dry hop) (aroma) |

Yeast: | White Labs WLP1023 in an overnight starter. Next time try a California ale yeast? | |||||||
Log: | One week primary fermentation. Dry hopped after first week of secondary fermentation. Kegged at the end of the second week. | |||||||
Carbonation: | Naturally carbonated with 2/3 cup of corn sugar. Got a little extra carbonation by being stored under pressure in the cooler before the party. | |||||||
Tasting: | Outstanding beer! Bitterness, hop flavor and aroma all balanced nicely and were supported by just enough malt. Got many compliments at the Christmas party and was consumed very quickly. |
