4 lb. German Munich
1 lb. American crystal 40L
8 oz. American crystal 60L
6 oz. British crystal 70-80L
3 lb. Flaked wheat
1 lb. American victory
1 lb. Belgian biscuit
Mash: 75% efficiency
Mash @ 158° for 75-90 minutes or so.
Boil: 90 minutes SG 1.076 13.5 gallons
15-minute pre-boil.
Whirl-Floc tabs in @ 15 minutes.
Hops: 3 oz. Centennial (10.9% AA, 75 min.)
2.5 oz. Kent Goldings (5.5% AA, 60 min.)
1 oz. Cascade (5.4% AA, 60 min.)
2 oz. Chinook (13.1% AA, 45 min.)
2 oz. Kent Goldings (5.5% AA, 15 min.)
1 oz. Chinook (aroma)
2 oz. Cascade (aroma)
Yeast: Wyeast 1028-London Ale starter.
Log: Dry hop w/lots of Centennial, Chinook,
and Cascade for a couple of weeks.
