This is a complex and tasty beer, less bitter and less sweet than Munchy. Next time All Grain.

Large pasta cooker, mashed in 3.5 quarts (1 quart below colander). Between 152° and 158° for one hour, mostly 154°. Sparged with total volume including grain 2.25 gallons. | ||||||||
Boil: | 60 minutes | SG 1.056 | 2.25 gallons | |||||
1 lb. 7 oz. Light malt extract | ||||||||
Full wort boil. Cooled with 4 trays ice cubes plus cold water bath. Temperature dropped fast until ice melted. Use more next time and sanitize trays, use boiled water for ice. |

Hops: | .4 oz. Cascade (5.7% AA, 60 min.) .6 oz. Spalt (4.1% AA, 45 min.) .9 oz. Cascade (5.7% AA, 15 min.) .7 oz. Spalt (aroma) |

Yeast: | Safale S-04, 1st repitching, 1 pint starter. | |||||||
Log: | Pitched at 3:30 p.m. SG is down to 1.054 after adding pint of starter. Dry hopped in secondary with Spalt. This is beer #9. |

Carbonation: | 1/2 cup corn sugar for 6 liter bottle. | |||||||
Tasting: | Just bottled - seems very promising. |
