Nuclear Testing IPA

I originally brewed this on 6/2/98, just after India did its
nuclear tests (I was planning it BEFORE they did the tests :-),
hence the name...

Brewer: Dan Langrill Email: langrill@mcs.com
Beer: Nuclear Testing IPA Style: India Pale Ale
Type: Extract w/grain Size: 5 gallons
Color:
20 HCU (~12 SRM)
Bitterness: 42 IBU
OG: 1.060 FG: 1.022
Alcohol: 5.0% v/v (3.9% w/w)
Water: Used 1 tsp Burton Water Salts before steeping Specialty Grains.
Grain: 0.33 lb. Toasted Malt
0.33 lb. American crystal 20L
Steep: Heat 1 gallon water to 155° F. Add water salts & turn off heat.
Add specialty grains & steep 30 mins.
Then add 1 gallon more of water to the boil.
Boil: 60 minutes SG 1.101 3 gallons
4 lb. Pale Malt LME
3 lb. Extra Light dry malt extract
0.75 lb. Turbinado Sugar
Used 1 tsp Irish Moss.
Hops: 1 oz. Galena (12.8% AA, 45 min.)
0.5 oz. Eroica (11.2% AA, 45 min.)
.5 oz. Tettnang (4.7% AA, 10 min.)
.5 oz. Cascade (6.1% AA, 10 min.)
.5 oz. Tettnang (4.7% AA, 2 min.)
.5 oz. Cascade (6.1% AA, 2 min.)
.5 oz. Eroica (11.2% AA, 0 min.)
.5 oz. Tettnang (aroma)
Yeast: Wyeast 1056, 1L starter
Log: Racked to secondary at 7 days
Dry hop using 1/2 oz Tettnang at 20 days
Bottled at 6 weeks
Started drinking the stuff at 8 weeks
Carbonation: 2.0 volumes Corn Sugar: 2.97 oz. for 4 gallons @ 70°F
I really used 3/4 cup corn sugar...Don't know if that comes out to
2.86 oz or not.

(I lost a gallon due to mistakes on my rack to secondary)
Tasting: Nice head retention. I might want to dry hop a little more? (I loved
the aroma, but might have wanted a little more)

I would have used fining agents (eg. polycar) - beer wasn't too clear,
esp. after dry-hopping.
