8 HCU (~6 SRM)
Bitterness: 55 IBU
OG: 1.065 FG: 1.016
Alcohol: 6.3% v/v (4.9% w/w)
Water: 1 Tbls CaCl2
1 tsp Kosher Salt NaCl2
added in to strike/Sparge H2O
2 tsp Gypsum
2 tsp CaCo3
added to Mash
Grain: 20 lb. American 2-row
1 lb. British crystal 50-60L
Mash: 100% efficiency
Dough in, pretty thick mash. temp 61°C time 12:30
Add 2 gal strike H2O No temp change 12:40
Pull decoction aprox 1/5 of mash vol.
Boil decoction for 10 min and add back to mash 1:20
Temp stablized at 67°C Hold for approx 40 min 2:00
Add some hot strike H2O to thin mash stir well
Rest 10 minutes and start recirculation. begin sparge
Boil: 60 minutes SG 1.065 12 gallons
Add rehydrated Irish Moss at the last 10 min.
Hops: 2 oz. Centennial (9.3% AA, 60 min.)
3 oz. Liberty (4% AA, 60 min.)
1 oz. Liberty (4% AA, 30 min.)
1 oz. Saaz (3.7% AA, 30 min.)
1 oz. Saaz (3.7% AA, 15 min.)
1 oz. Ultra (2.1% AA, 15 min.)
1 oz. Mt. Hood (aroma)
2 oz. Ultra (aroma)
Yeast: Cooled wort was add on top of London III yeast cake
Previous brew. Vigorous fermentation in approx 12 hours.
