Mertz's Kemo Sabe' Ale
Got this recipe out of Brew Your Own magazine. I modified it slightly.

Water: | Where I live we have GREAT water for brewing with about 200 on TDS. No chlorine or chemicals added so little is needed to prepare the water. | |||||||
Grain: | 1 lb. American 2-row 1 lb. American Munich .5 lb. Raw wheat |

Steep: | Grains were added to 1.5 gallons of water and were slowly brought to 155°. I repeated this step for a total of 4 times totaling 6 gallons. | |||||||
Boil: | 60 minutes | SG 1.047 | 6.25 gallons | |||||
7 lb. Light malt extract | ||||||||
Irish moss with 15 min. remaining. | ||||||||
Hops: | 1.75 oz. Fuggles (4.3% AA, 60 min.) .5 oz. Fuggles (4.3% AA, 30 min.) .75 oz. Cascade (6% AA, 15 min.) .1 oz. Cascade (aroma) |

Yeast: | White labs liquid California Ale Yeast. Starter with 1/2 cup DME, 1/2 tsp yeast nutrient, 1 pint water boiled all for 15 min. Added to yeast at 70° . Repeated process for a total of 3 times. 3 days between starters. |

Log: | Fermented at 67°. Primary 4 days. Secondary 6 days. Dry hopped with .1oz Cascade (6%) in secondary. | |||||||
Carbonation: | Bottled: Primed with 4.85oz of corn sugar to 5.5 gallons. | |||||||
Tasting: | This is my first posting, but I had to do it with this brew. Definently one of the best beers I've ever made. Smooth, crisp and full flavored. IF I were to do it diferently I would make it a little more hoppy. I love hops. |
