18 HCU (~11 SRM)
Bitterness: 51 IBU
OG: 1.060 FG: 1.015
Alcohol: 5.8% v/v (4.6% w/w)
Water: Add a teaspoon or so of gypsum if you like.
Grain: 1 lb. British Pale
0.5 lb. Wheat Malt
0.75 lb. British Crystal 50-60L
Steep: Toast the pale malt @ 350° F for 15 minutes.
Steep grains for the typical 45 minutes @ 155° F.
Boil: 60 minutes SG 1.060 5 gallons
6 lb. Light LME
1 lb. Light DME
Add 1 teaspoon of flaked Irish Moss the last 15 minutes of the boil.
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Kent Goldings (5% AA, 30 min.)
1 oz. Mt. Hood (4.5% AA, 15 min.)
1 oz. Fuggles (aroma)
Yeast: Wyeast #1098 English Ale
Log: The last hop addition is actually a dry hop.
Carbonation: Bottle using corn sugar or force carbonate in kegs.
