Bitterness: 38 IBU
OG: 1.062 FG: 1.015
Alcohol: 6.1% v/v (4.8% w/w)
Grain: 1 lb. British crystal 50-60L
1 oz. British chocolate
Steep: -Heat 1 gal water to 160°F
-Add specialty grains & steep at 150°F 30 min
-Strain & sparge w/ 1 gal 150°F water
-Bring to boil, add other ingredients + water to 2.5 gal
Boil: 60 minutes SG 1.124 2.5 gallons
5.75 lb. Light malt extract
1 lb. Wheat extract
-Irish moss 15 min
-Cascade aroma hops 1 min

Hops: 3 oz. Cascade (5% AA, 60 min.)
1 oz. Willamette (5% AA, 30 min.)
1 oz. Fuggles (4.75% AA, 15 min.)
1 oz. Cascade (aroma)
Yeast: Wyeast 1056 cake from last batch
Log: Dry hop in secondary w/ 1/4 oz Cascade + 1/4 oz Willamette
Carbonation: 3/4 cup corn sugar
