Walker's Biting IPA
This is an attempt to brew a nice hoppy, biting IPA for my wife.

Water: | Boil uses 2.5 gallons of bottled spring water with 2 tbsp gypsum. |

Steep: | Crush grains and place into a bag. Steep at 150°F for 30 minutes before adding extract. |

I start timing the boil when the hot break happens. All pellet hops are bagged in the boil. Plugs are loose boiled. 1 tbsp Irish moss added with 20 minutes left in the boil. Wort is cooled "poor man's" style by adding 2 gallons of ice. |

Yeast: | 1 packets American Dry Ale yeast, rehydrated in 1 cup of 80°F water 20 minutes before the end of the boil. | |||||||
Log: | Brew Date: Sept 10, 2005 Ferment for 4 days @ 77°F in primary (6.6 gallon carboy). Rack to secondary with gelatin finings. Dry hop with one ounce of Cascade hops. Ferment for 10 to 14 days @ 77°F in secondary (5 gallon glass carboy). Rack to bottling bucket with priming sugar. Bottle condition for at least 2 weeks before drinking. |

Tasting: | Will update with tasting comments when it's ready to go. Initial taste of cooled wort (that had not settled the cold break yet) was horribly acrid. |
