add Irish Moss 15 minutes before end of boil. Do not add aroma hops to the boil but use them to dry hop in the secondary fermenter. This is true to methods of the 1830's | ||||||||
Hops: | 292g Kent Goldings (4.3% AA, 90 min.) 55g Kent Goldings (aroma) |

Yeast: | Two packets of Safale S04 | |||||||
Log: | Dry hop in secondary fermenter. After racking mature for at least 8 months. This is the length of the sea crossing from England to India in the 1830's and the beer would probably have been kept for some time before bing loaded onto the ship so it should continue to improve with age. | |||||||
Carbonation: | bottle conditioned. If bottled at FG then add half a teaspoon of sugar to each 500ml bottle. | |||||||
Tasting: | You really do have to let this beer mature. After 1 month it will taste so bitter that you'll think that you've made a mistake but give it time for the bitterness compounds to change into something else and you will be rewarded with a taste like no other. After the wait you'll just wish that you made more of it! |
