Brewed with Schuylkill water, seemed appropriate to name it after some fine fightin Schuylkill fish!

Water: | Heat to ~200 and then let sit (no lid) till 150, then start steep. | |||||||
Grain: | 2 lb. American crystal 20L 2 oz. British chocolate |

Steep: | Cheesecloth ... 2x small ones make it easier to handle the rinse. Steep @ 150F for 1/2 hr. Occasional squeeze with tongs (I can't help myself). Siphon off a gallon, siphon it back over one teabag for rinse (dispose of 1st teabag). Siphon another gallon, siphon back in for other teabag (dispose). | |||||||

Yeast: | 2 packets Fermentis Safbrew S-33. Started in ziploc w/some warm water and tbsp brown sugar. | |||||||
