Single infusion batch sparge. Mash grains with 2 gallons of water at 155° for one hour. Add sparge water (3 gallons)at 172° stir,let sit for 5 minutes and drain.Collect 4 gallons of liquid.If necessary do another charge of sparge water. | ||||||||

Log: | Ferment at 68° for 2 weeks. Rack into Keg at 45° for one week. Force carb. | |||||||
Carbonation: | 2.5 volumes | Keg: 9.7 psi @ 35°F | ||||||
I like a little more carbonation then style calls for,also I do it slowly by letting it sit for few days before consuming. |
