Escondido Pale Ale

Water: North County San Diego tap water (hard).
Grain: 1 lb. American crystal 60L
Steep: Place crushed grains in a nylon steeping bag and shake to remove flour. Put the bag in 2 gallons of water and bring to 155°F. Hold for 30 minutes. Remove the bag and squeeze out additional wort into the kettle.
Boil: 60 minutes SG 1.138 2 gallons
6 lb. 9.6 oz. Light malt extract
6.4 oz. Dark dry malt extract
Add DME first to prevent clumping. Add 1 teaspoon Irish moss after 55 minutes. Ensure that the maximum amount of heat is used whilst guarding against boil-overs; however this recipe posed us no threat.
Hops: 1 oz. Galena (13% AA, 60 min.)
0.5 oz. Magnum (12% AA, 30 min.)
0.5 oz. NZ Super Alpha (13.3% AA, 30 min.)
0.5 oz. Magnum (12% AA, 15 min.)
0.5 oz. NZ Super Alpha (13.3% AA, 15 min.)
Yeast: White Labs WLP001; no starter.
Carbonation: Cooper's Carbonation drops @ 2 / 22oz bottle.
Tasting: Delicious.
