Party in my pants

This is a sorta-clone of Sierra Nevada Celebration Ale. Yummy and delicious!!

Type: All grain Size: 10 gallons
Color:
10 HCU (~7 SRM)
Bitterness: 37 IBU
OG: 1.062 FG: 1.018
Alcohol: 5.6% v/v (4.4% w/w)
Water: I have an Ionics ion exchanger water softner. I have never actually checked the water I brew with, but I also have never had any problems that could be traced to water. If it ain't broke...
Grain: 22 lb. American 2-row
1 lb. American crystal 60L
1 lb. Dextrine malt (Cara-Pils)
Mash: 70% efficiency
I mash with two 5-gallon round coolers, each equipped with a false bottom. I mash for 1 hour at 158° -ish, drain, add 170° water, stirand let sit for 10-15 minutes, and drain
Boil: 60 minutes SG 1.051 12 gallons
added Super Moss (1/2 tsp) with 15 min to go
Hops: 2 oz. Cascade (6% AA, 60 min.)
2 oz. Chinook (12% AA, 15 min.)
2 oz. Chinook (aroma)
Yeast: Safale US-05. I just pitched it on top, no starter. So far, every experience i have had with smack-packs and starters has ended badly. I have yet to have aything but success with just pitching the dry yeast right on top of well agitated cooled wort. I split the wort into 2 buckets and add 1 pack of yeast to each. It always starts within 24 hours.
Log: I rack between 5 and 7 days after pitching. I'm just not sophisticated enough for science, I wait for the bubbles to stop. I leave it in Secondary for an additional 14-16 days, and dry hop with 7 days to go.
Carbonation: I keg it, and whack it with CO2 at 10psi-ish. It's carbonated after a week, but not a good idea to consume
Tasting: I drew a glass after a week, and almost dumped the keg out. It was muddy and has very weak flavors. After 3 week, however, it was quite tasty. It only made it to 4 weeks, as I had a party and decided to share the good stuff. There was much wailing and nashing of teeth when the keg ran dry! I can only imagine what this is ;oke at the 3 month mark!!
