toast 0.5 lb. 2-row for 10 mins/350F. add 4gm gypsum to 10-12 quarts water and heat to 145F. add crushed grains. mash will stabilize at 133F. hold for 30 mins. add 5 quarts boiling water to mash and hold for 45 mins. raise to 158F and hold for 20 mins. once conversion is complete, heat mash to 167F and sparge with 3 gallons (add other half of gypsum) preboiled water at 170F. | ||||||||
