Steep: | Steep in grain socks at 156 for 45 minutes remove grain and bring to boil. |

4 lb. Light dry malt extract 2 lb. Belgian candi sugar 1 lb. Honey |

Remove from heat and add extract and candi sugar. Again bring to boil and add hops. Add the honey and 1 tsp Irish Moss - 15 minutes from end of boil. |

Carbonation: | 4.5 ounces of brown sugar. Boil the sugar in 2 cups of water for at least 10 minutes;allow it to cool while covered; pour into bottling bucket then rack from secondary into bucket to bottle. |
