Scott's Belgian Golden

My goal is to consintrate on the step mashing process and produce a flavorful Golden Strong Ale within the Belgian style.

Type: All grain Size: 5 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 26 IBU
OG: 1.090 FG: 1.012
Alcohol: 10.1% v/v (7.9% w/w)
Water: Boil all water for a minimum of an hour prior to brewing.
Grain: 1 lb. Belgian pale
10 lb. Belgian Pilsner
4 oz. Belgian biscuit
1 lb. Raw wheat
Mash: 80% efficiency
Protien rest at 122° F for 15 minutes. Saccharification rest at 150° for 45 minutes. Mash out at 170 for 10 minutes. Sparge off at 165° in 45 minutes.
Boil: 60 minutes SG 1.065 7 gallons
2 lb. Belgian candi sugar
Hops: 1 oz. Hallertauer (4.25% AA, 60 min.)
1 oz. Styrian Goldings (5.5% AA, 30 min.)
1 oz. Saaz (aroma)
Yeast: White Labs Trappist Ale Yeast #WLP500
Carbonation: Cask condition in 5 gal. keg with 3/4 cup of priming sugar
