Flying Red Junk Yard Dog Ale

This beer was designed to commemorate the first showing of my
son's dog Rogan at an agility trial. During the two day trial they
were in the ring 6 times and brought home 5 first place ribbons.

Type: All grain Size: 5 gallons
Color:
23 HCU (~13 SRM)
Bitterness: 43 IBU
OG: 1.105 FG: 1.018
Alcohol: 11.2% v/v (8.8% w/w)
Grain: 8 lb. Belgian pale
3 lb. Belgian Munich
8 oz. Belgian biscuit
8 oz. Belgian CaraMunich
Mash: 80% efficiency
Mash with three gallons of water at 140° and hold for 20 minutes
Raise temperature to 155° and hold for 80 minutes
Mash out at 170° sparge and collect 7.5 gallons of wort.
Boil: 60 minutes SG 1.070 7.5 gallons
3.3 lb. Light malt extract
1 lb. Belgian candi sugar
Boil for 60 minutes add Irish moss at the last 20 minutes of the boil
Hops: 1/2 oz. Fuggles (4.75% AA, 60 min.)
1/2 oz. Hallertauer (4.25% AA, 60 min.)
1/2 oz. Northern Brewer (8.5% AA, 60 min.)
1/2 oz. Hallertauer (4.25% AA, 30 min.)
1/2 oz. Northern Brewer (8.5% AA, 30 min.)
2 oz. Hallertauer (aroma)
Yeast: Belgian Ale Yeast
Carbonation: 2.2 volumes Keg: 21.4 psi @ 65°F
Corn Sugar: 3.47 oz. for 5.0 gallons @ 65°F
