The Claude Bonaire Belgian Strong Man Ale

This would be a Dubbel, but it actually attenuated too low, and i added so many "extras" that it wasnt true to style. Im excited about it though, it was my own version of the great Seasonal Belgians iveeen quaffing since Thanksgiving, I couldnt resist trying.

Beer: The Claude Bonaire Belgian Strong Man Ale Style: Belgian Strong Ale
Type: Extract w/grain Size: 5 gallons
Color:
59 HCU (~24 SRM)
Bitterness: 14 IBU
OG: 1.098 FG: 1.013
Alcohol: 11.0% v/v (8.6% w/w)
Grain: 4 oz. Belgian aromatic
8 oz. Belgian Special B
2 oz. Roasted barley
Steep: all grains were in a grain bag.
Brought to 150 and held for 10min.
Raised to 175 for 20min.
Finally, raised water to boiling and removed grain at 208, approximately 40min totaly time.
Boil: 15 minutes SG 1.123 4 gallons
6 lb. 6 oz. Light dry malt extract
2.25 lb. Amber dry malt extract
1 lb. Brown sugar
1 lb. Belgian candi sugar
2Tbs Corriander Seed, Crushed(last 15min)
5Tbs Sweet Orange Peel (last 15min)
1Tbs Cinnamon (added with 1lb of Brown sugar in secondary)
Hops: 1 oz. Kent Goldings (5% AA, 60 min.)
.75 oz. Hallertauer (4.25% AA, 45 min.)
.5 oz. Saaz (aroma)
Yeast: WLY500, started in 16oz starter for 10 hours.
Log: So I initially had no intention of putting the brown sugar in or the cinamon, but when i racked to the secondary they yeast had attenuated so well in 7days, i figured id give them something else to do, as they were almost done, and surely getting bored.
Carbonation: 3/4 cups brown sugar for bottling
Tasting: Early on, it had a very phenolic nose. Granted it was flat and 70. After that, the Special B really shined through with good plum and a little bannana. NOthing too special... yet, but its only been 18days. we'll see what comes. The orange and Corriander are there, but just barely, i didnt use a lot considering the "size" of the beer. And i have yet to find the cinnamon. I hope it comes through. anyone wondering about the name..... just check this guy out... he needed something named after him... poor schmuck....i mean seriously.. a dead whore?
