Grain: 15 lb. Belgian Pilsner
1 lb. Wheat malt
4 lb. 8 oz. Belgian Munich
8 oz. German Vienna
4 oz. Belgian aromatic
4 oz. Belgian biscuit
4 oz. Belgian CaraMunich
4 oz. Belgian Special B
Mash: 60% efficiency
Single infusion @ 149-152F for 90 min.
Boil: 180 minutes SG 1.062 9 gallons
1 lb. Belgian candi sugar
8 oz. Brown sugar
2 tsp Irish moss added 15 min before knockout.
Hops: 1 oz. Saaz (3.75% AA, 60 min.)
.5 oz. Saaz (3.75% AA, 30 min.)
1 oz. Styrian Goldings (5.5% AA, 30 min.)
.5 oz. Styrian Goldings (aroma)
Yeast: 1L active Whitelabs #550 Belgian Ale yeast starter.
