Saison Dupont clone attempt

Per the information in Phil Markowski's "Farmhouse Ales", this is an extract recipe designed to mimic the classic Brasserie Dupont "Saison Vielle Provision". I think it will be difficult to hit the ambitious terminal gravity shown, but this seems to be as straightforward a clone recipe as can be generated for extract brewing.

OG: 1.053 FG: 1.006
Alcohol: 6.1% v/v (4.8% w/w)
Grain: 0.5 lb. Belgian Pilsner
Steep: steep grain in bag in 1.5 gal water in brew pot until just before boil, approx. 30 min.
Boil: 60 minutes SG 1.133 2 gallons
7.0 lb. Light malt extract (liquid - Austin Home Brew)
Hops: 3.5 oz. Kent Goldings (5% AA, 60 min.)
.5 oz. Kent Goldings (aroma)
1 oz. Styrian Goldings (aroma)
Yeast: White Labs WLP565 Belgian Saison I

(this is allegedly the Dupont strain(s))
Log: Pnal to brew 10/22/05
Carbonation: prime with 3/4 cup invert sugar at bottling
