A dark and potent old ale fermented with Belgian yeast for a malty, fruity complexity.

Alcohol: 10.5% v/v (8.2% w/w)
Water: Kalamazoo, MI tap water, boiled to remove chlorine.
Grain: 3 lb. Maris Otter
3 lb. British Munich
.5 lb. Biscuit
1 lb. Crystal 60L
1 lb. Crystal 80L
1 lb. Flaked Oats
Mash: 60% efficiency
122°F for 20 min.
155°F for 75 min.
170°F for 10 min. mash out
Boil: 75 minutes SG 1.081 6.5 gallons
6.6 lb. John Bull Light LME
1 lb. Laaglander Light DME
1 lb. Homemade Invert Sugar (Carmelized)
Irish Moss added at 15 min. left in the boil.
Gelatin finings added to secondary.
Hops: .5 oz. Chinook (12% AA, 60 min.)
.5 oz. Chinook (12% AA, 45 min.)
1 oz. Fuggles (5% AA, 20 min.)
.5 oz. Fuggles (5% AA, 10 min.)
.5 oz. Fuggles (aroma)
Yeast: Laaglander DME in recipe used for 1/4 gallon yeast starter, with one
vial of White Labs Trappist Ale pitchable yeast.
