This is my first go at a Belgian Ale. It was intended to be a clone of the Trappist Chimay Red, but I think it is more along the lines of the Chimay Blue. I taste tested mine against a bottle of red, and found the red to be much more "yeasty" than my version. Mine was less "yeasty" and had a more chocolate full flavor. Actually I liked mine much more, as the subtle "yeasty" Belgian trademark is much more compatible for my palate. Anyway, I am very pleased with the results, and will definitely make this again for next Christmas!

4.0 oz. American chocolate
Steep: Grains steeped until boil.
Boil: 60 minutes SG 1.143 3.0 gallons
7.0 lb. Light malt extract
1.0 lb. 8.0 oz. Light dry malt extract
2.0 lb. Brown sugar
Hops: 2.0 oz. Tettnanger (5.6% AA, 60 min.)
1.0 oz. Willamette (4.8% AA, 15 min.)
Yeast: #1214 Wyeast Belgian Abbey

12/06/2002 Bottled
OG was actually 1082
FG was actually 1016, so alcohol % is accurate
Carbonation: 5 ounces of priming sugar
Tasting: This beer is a brown belgian style beer with a very nice mellow chocolate flavor. It has a full mouthfeel of chocolate but finishes nicely with a Belgian aftertaste from the yeast. It is NOT as "yeasty" as the real Chimays, but I like it better, and it is potent!
