Added chai tea spices at 45 minutes. 1 cinnamon stick 25 whole cloves 10 whole star anise 1 whole cracked nutmeg 5 tsp whole black peppercorns 4 tsp vanilla extract 6 tsp cracked whole cardamon pods Also added yeast nutrient at 45 mins. |

Yeast: | White labs 550 belgian ale yeast, a great yeast for high gravity beers, was too lazy to make a starter and this yeast still fermented down in less than a week!! | |||||||
Log: | 7 days in primary at 65-68°, 5 days in secondary at 65-68° | |||||||
Carbonation: | 1.9 volumes | Honey: 3.15 oz. for 5 gallons @ 68°F | ||||||
Tasting: | What you would expect from a dubbel up front but then come the spices and the phenolics from the yeast, great combination, enjoy! |
