Water: Filtered tap & 1tsp. gypsum in mash
Grain: 10 lb. American 2-row
10 oz. Wheat malt
10 oz. German Munich
2 lb. American crystal 10L
3 oz. Roasted barley
Mash: 70% efficiency
one step infusion,14 qts water w/gypsum @ 155° for 60 min. mash out @ 170° for 10 min. sparg with 175° water for total of 7.25 gal.
Boil: 60 minutes SG 1.048 7.25 gallons
Irish moss @ last 20 min. of boil add hops as required
Hops: 1 oz. Northern Brewer (8.6% AA, 60 min.)
1 oz. Cascade (6% AA, 20 min.)
.5 oz. Fuggles (4.5% AA, 10 min.)
Yeast: British ale # 1098 w/ 16 oz. starter
Log: ferment @ 64-68 deg. primary @ 5-7 days,secondary @ 12-14 days,age in keg 4-6 weeks
Carbonation: 2.7 volumes Keg: 17.2 psi @ 45°F
