The Great White Ale

This is EXCELLENT, if I do say so myself.

Beer: The Great White Ale Style: Belgian White (Wit)
Type: All grain Size: 5.5 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 21 IBU
OG: 1.049 FG: 1.008
Alcohol: 5.2% v/v (4.1% w/w)
Water: Filter water to remove chlorine
Grain: 5 lb. 8 oz. Belgian Pilsner
4 oz. Belgian biscuit
4 oz. Flaked oats
4 lb. Flaked wheat
Mash: 75% efficiency
Single step mash at 155° F for 60 minutes or until conversion
Use 1 lb rice hulls to prevent stuck mash
Boil: 60 minutes SG 1.041 6.5 gallons
Irish moss at 15 minutes (rehydrated)

At 15 minutes add the following:
1/2 oz. crushed corriander seed
1/2 oz. dried bitter orange peel
3/4 tsp. (about 3-4 pods) crushed cardamom
1/4 tsp. ground cumin
1/2 tsp. crushed grains of paradise

At 3 minutes add the following:
1/2 oz. crushed corriander seed
1/2 oz. dried bitter orange peel
Hops: 1 oz. Styrian Goldings (5.25% AA, 60 min.)
.5 oz. Saaz (3.5% AA, 15 min.)
Yeast: Wyeast 3944 Belgian White Beer from starter
Log: If desired, add 1-2 tsp. lactic acid at racking (I find this not to be necessary)
Let sit at least a month to give the spices time to mellow.
Carbonation: 2.3 volumes Keg: 11.1 psi @ 42°F
Tasting: Excellent!
