Second effort to improve upon the Christmas White Ale. We'll let you know.

Use orange blossom honey. Add 1/2 oz. of corriander and 1/2 oz. of orange peel at last 15 minutes of boil. Add another 1/2 oz. of corriander during cooling for aroma. Add 1/2 oz. orange peel at cooling. |

Hops: | 1 oz. Hallertauer (5% AA, 60 min.) .5 oz. Hallertauer (5% AA, 15 min.) |

Yeast: | Wyeast Belgian Wit (# 3944) | |||||||
Log: | Ferment at room temp. Rack after one week. Six weeks in secondary. We were lazy and too busy to bottle. Should be OK since most of the yeast was removed at the rack to secondary. We would recommend bottling after 3 weeks in secondary. | |||||||
