Bitterness: 20 IBU
OG: 1.048 FG: 1.010
Alcohol: 4.9% v/v (3.9% w/w)
Water: soft water
Grain: 10 lb. American 2-row
8 lb. Wheat malt
2 lb. Rolled oats
Mash: 65% efficiency
150°F for 90 minutes
Sparge with 7 gallons water @ 170°F
Boil: 90 minutes SG 1.042 11.5 gallons
Irish moss last 15 minutes
Bitter orange & corriander (crushed) 2oz each last 5 minutes
Hops: 2 oz. Tettnanger (4.5% AA, 75 min.)
.5 oz. Saaz (3.75% AA, 30 min.)
Yeast: Wyeast belguim 'Wit' stepped up twice for each batch.
Log: 1 week Primary
1 week secondary
Minimum 3 weeks in bottle. This will allow flavors to mellow.
Carbonation: 2.5 volumes Keg: 28.8 psi @ 70°F
Corn Sugar: 4.47 oz. for 5 gallons @ 70°F
Bottled one and kegged one
Bottled- 4.5 oz cornsugar
