Steep: | Crush and steep grains in 1 gallon water 150°F water for 30 minutes; sparge with 1/2 gallon 170°F water. | |||||||

Add water to make 2.5 gallons and bring to boil. Add 0.25 oz bitter orange peel, 0.75 tsp crushed coriander seeds, and 1/8 tsp crushed cumin seeds all at 45 minutes. Then at 13 minutes add 0.5 oz bitter orange peel, 0.5 tsp crushed coriander seeds, and 1/8 tsp crushed cumin seeds. | ||||||||

Log: | Ferment at 60-75°F for 5-7 days or until fermentation slows and then rack to secondary. Bottle after around 2 weeks in secondary; bottle condition for 2-3 weeks. | |||||||
Carbonation: | Prime with 3/4 cup corn sugar. |
