Bleu Lunatic

adapted from Randy Champaign's all grain recipe on the site, and converted to extract based brew.

Beer: Bleu Lunatic Style: Belgian White (Wit)
Type: Extract w/grain Size: 5.5 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 18 IBU
OG: 1.046 FG: 1.008
Alcohol: 4.9% v/v (3.8% w/w)
Water: Reverse Osmosis filtered water
Grain: 8 oz. Flaked oats
Steep: Steep Oats @ 155-165*F 30 minutes.
Boil: 60 minutes SG 1.063 4.0 gallons
6.6 lb. Wheat extract
.75 oz. Coriander Seed (last 15 minutes of boil)
.75 oz. Sweet Orange Peel (last 15 minutes of boil)
.85 oz. Bitter Orange Peel (Curaocuao) (last 15 minutes of boil)
60 min. dumped in an expired pack of Nottingham dry yeast for nutrients.

add 1/2 of the LME late in boil (15 min) to reduce carmelization. Don't blast the burner!!

Adjust hops to keep it in the ~18 IBU range. My LHBO had Saaz leaf hops with very low AA @ 2.1% (usually about 3.5%). Original recipe called for all Saaz, but I subbed the Hallertau so I wouldn't have to use 4 oz. to get the IBUs I wanted.
Hops: 1 oz. Hallertauer (4.2% AA, 60 min.)
.65 oz. Saaz (2.1% AA, 45 min.)
.5 oz. Saaz (2.1% AA, 15 min.)
Yeast: White labs #WLP400, pitched @ 77*F. No starter this time but definately next time. I'll keep a bit from the yeast cake and store till next batch.

bottle age 4 weeks minimum for best balance of flavors
Carbonation: 2.5 volumes Corn Sugar: 4.47 oz. for 5.0 gallons @ 70°F
Tasting: Nice beer, benefits greatly from time. give it 4-6 weeks in the bottle to reach peak. Very close to Blue Moon, considering it is an extract brew.
