Originally going to add kiwi to secondary, but decided not to (maybe next time). This was a fantastic beer as good as hoegaarden or Allagash White

Batch sparge 3.3 gal water in mash to 152F, add 0.8 gal boiling to mash out temp of 168F. Drain, then add 3 gallons 170F water for second sparge. | ||||||||

No IM needed. 0.25 oz. corriander 0.25 oz. bitter orange zest from LHBS 0.25 oz. fresh sweet orange zest |

Log: | Funky yeast. Kept fermentation at 65 for first week. As started slowing allowed temp up to room temp around 72F and it took off - coming out the airlock. Activity slowed around day 15. Racked to secondary at 72F for 2 more weeks. | |||||||
Carbonation: | med-high carbonation | |||||||
Tasting: | Wonderful citrus, peppery spice, and wheat flavors and aromas. Everything seemed perfectly balanced and subtle. Won't change a thing (other than maybe add the kiwi next time). Five gallon keg drained quickly at the Ga USTA tennis championships. Our team may not have won a lot of matches but at least we had great beer courtside. |
