Steep: | Steep @ 155 degrees for 15 minutes. Remove and sparge. | |||||||
Boil: | 60 minutes | SG 1.047 | 5 gallons | |||||
4 lb. Wheat extract 2 lb. Honey |

Use orange blossom honey. Add 1/4 oz. of corriander and 1/2 oz. of orange peel at last 15 minutes of boil. Add another 1/4 oz. of corriander during cooling for aroma. Add one tablespoon of Irish Moss at last 15 minutes of boil. | ||||||||
Hops: | 1 oz. Hallertauer (4.25% AA, 60 min.) .5 oz. Hallertauer (4.25% AA, 5 min.) |

Yeast: | Wyeast Belgian Wit (# 3944) | |||||||
Log: | Ferment at room temp. Rack after bubbling slows past 30 seconds. Bottle once bubbling reaches 1.5 minute intervals. | |||||||
Carbonation: | Added 3/4 cup corn sugar for priming. | |||||||
Tasting: | Used plastic buckets that had been damaged with bleach. Should have been good. Would have used more corriander. Consider adding to secondary. B-brite and Idophor are your friend. |
