Log: | After fermentation began, the fermenter went into a 68F waterbath for 5 days. After 5 days the water was drained and the fermenter left alone so as not to disturb the yeast on the surface. Days 3-4 were marked with a strong sulfur smell. This is normal for this yeast and faded after day three. I plan to bottle this brew after it spend 3 weeks in the primary. I pulled a sample out after a week and a half in the fermenter. For some reason the gravity is still 1.020 but it tastes delicious. |

Tasting: | Short version: Tastes good, I'd brew it again, but it is not like mothership wit. It is more of a traditional tasting wit. I will be expirimenting with this clone. Next time i will increase the wheat malt extract and corn, and decrease the barley malt extract and all the spices. I will also definitely add irish moss to the boil since mothership is so clear at first pour. |
