Failed attempt at a clone of mothership wit. Still a tasty wit.

Beer: motherload Style: Belgian White (Wit)
Type: Extract w/grain Size: 5 gallons
Color:
7 HCU (~6 SRM)
Bitterness: 15 IBU
OG: 1.051 FG: 1.010
Alcohol: 5.2% v/v (4.1% w/w)
Water: bottled spring water.
Grain: 4 oz. Flaked oats
4 oz. Flaked corn
8 oz. Wheat malt
Steep: 30 minuates at 154F
Boil: 60 minutes SG 1.101 2.5 gallons
3 lb. Extra Light dry malt extract
2.8 lb. Wheat extract
.75 ounce coriander, .5 ounce orange zest, .5 oz bitter orange peel all added to the boil with 20 minutes left.
Hops: 0.98 oz. Hallertauer (4.25% AA, 60 min.)
0.98 oz. Saaz (3.75% AA, 20 min.)
Yeast: wyeast belgian wit 3944
Log: After fermentation began, the fermenter went into a 68F waterbath for 5 days. After 5 days the water was drained and the fermenter left alone so as not to disturb the yeast on the surface.
Days 3-4 were marked with a strong sulfur smell. This is normal for this yeast and faded after day three.
I plan to bottle this brew after it spend 3 weeks in the primary.
I pulled a sample out after a week and a half in the fermenter. For some reason the gravity is still 1.020 but it tastes delicious.
Tasting: Short version: Tastes good, I'd brew it again, but it is not like mothership wit. It is more of a traditional tasting wit.
I will be expirimenting with this clone. Next time i will increase the wheat malt extract and corn, and decrease the barley malt extract and all the spices. I will also definitely add irish moss to the boil since mothership is so clear at first pour.
