Beer: Global Climate Change Kolsch Style: Kölsch
Type: All grain Size: 5.5 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 22 IBU
OG: 1.053 FG: 1.010
Alcohol: 5.5% v/v (4.3% w/w)
Water: 1/4 Campden tab in 3.5 gallons mash water
1/4 Campden tab in 5 gallons batch sparge water
Grain: 10 lb. German Pilsner
1 lb. American Vienna
Mash: 70% efficiency
90 min rest @ 149°F
1 Tbsp. 5.2 pH mash stabilizer
Boil: 60 minutes SG 1.045 6.5 gallons
Irish Moss @ 15 minutes
Hops: 1 oz. Liberty (4% AA, 60 min.)
1 oz. Spalt (2% AA, 60 min.)
Yeast: Wyeast 2565 Kolsch
Log: I usually violenty shake the fermenter at 1 to 1.5 gallon intervals during transfer. The properties of the Pilsner malt (which I had never used before) caused the carboy to fill with foam and overflow. Oops. Any ideas on how to aerate wort when Pilsner was the base grain?
