4 lb. 8 oz. German Pilsner
4 lb. German Munich
3 oz. Acidulated Malt
2 oz. Chocolate Wheat Malt
Mash: 75% efficiency
Mash at 150 degrees F for 60 minutes with 1.25 quarts per lb. of malt (12 Quarts at a strike temp of 163.6 degrees F). Mash out at 168 degrees F with 7 quarts of 190 degree F water. Sparge with another 5 quarts of 170 degree F water. Collect 5 gallons pre boil volume. Add 2 gallons and bring to a boil.
Boil: 90 minutes SG 1.038 7.0 gallons
Hops: 0.5 oz. Magnum (14% AA, 60 min.)
1.0 oz. Hallertauer (4.25% AA, 30 min.)
1.0 oz. Hallertauer (4.25% AA, 15 min.)
Yeast: White Labs - Dusseldorf Alt Yeast WLP036
Log: Ferment for 2 weeks at 62 to 65 degrees F. Yeast optimal temp range 65-72 degrees F.
Carbonation: Carbonate to 2.5 volumes.
