2 lb. Belgian CaraMunich
2 oz. American black patent
Mash: 82% efficiency
Strike at 145° for 15 mins, thick mash. Raised to 151° for 45 mins.
Boil: 90 minutes SG 1.039 13 gallons
Irish moss added last 15 mins of boil
Hops: 2 oz. Spalt (5.3% AA, 90 min.)
.5 oz. Saaz (3.0% AA, 45 min.)
1 oz. Saaz (3.0% AA, 20 min.)
1.5 oz. Saaz (aroma)
Yeast: Whitelabs Dusseldorf Alt yeast

2 6gal glass, Starting S.G. 1.051,Yeast piched at 81°F. Fermentation began 24hrs later at 64°F.
>08/17/2005 - Transfered to secondary fermentors. Temperature 65°F and held.
