This is a non-traditional Altbier. After making a previous, traditional Alt, I decided to just get experimental.

Steep: | I steep the grains at 155° for 50 minutes. sparge with 1 quart of spring water | |||||||
Boil: | 60 minutes | SG 1.185 | 2 gallons | |||||
2 lb. Light dry malt extract 6 lb. Wheat extract 12 oz. Honey |

Add the honey at the last 3 minutes of the boil to retain the flavor. add one tablet of Whirlfoc-T at the same time as the honey. | ||||||||
Hops: | 2 oz. Perle (8% AA, 60 min.) 2 oz. Spalt (6.75% AA, 45 min.) 2 oz. Hallertauer (4.25% AA, 15 min.) |
