Angry Alt

What, a German Ale??! This Dusseldorf style Alt Ale was inspired by the book "Altbier" written by Horst Dornbusch. This recipe follows the Dusseldorf style, with a Northwest twist.

Type: All grain Size: 5 gallons
Color:
17 HCU (~11 SRM)
Bitterness: 38 IBU
OG: 1.055 FG: 1.010
Alcohol: 5.8% v/v (4.6% w/w)
Water: Tacoma, WA water. Nothing added, nothing needed.
Grain: 6 lb. American 2-row
1.5 lb. German Vienna
1.5 lb. German Munich
1 lb. American crystal 60L
Mash: 75% efficiency
Infusion mash at 155 for 60 minutes.
Boil: 60 minutes SG 1.046 6 gallons
Hops: 2 oz. Hallertauer (4.25% AA, 60 min.)
1 oz. Hallertauer (4.25% AA, 15 min.)
1 oz. Hallertauer (aroma)
Yeast: Wyeast 1007 (or White Labs equivalent)
Carbonation: Forced carbonation, 12 - 15 lbs CO2, and then served with 10 lb CO2
Tasting: OG high for the style, but I am counting on lower potential from the grain that I will actually use (based on experience). This should also lower the alcohol to desired range of 4.8%.
