Steep: | water treated with 1 heaping teaspoon gypsum (calcium sulfate.)grains crushed and steeped in grain bag placed in 4 gallons water at 120°F, then brought up to 158°F to steep for 1 hour, stirring regularly. grain bag removed and flushed, with flush water added into boil | |||||||

Yeast: | California ale yeast, started in 1 quart of wort with 1/4 teaspoon yeast nutrient boiled with large spoonful of light malt extract, no gravity check, starter made 24 hours before brewing. airlock bubbled well all day, smells like yeast! slowing down significantly by brew time. | |||||||
