Dionysious Honey Ale
A very good honey ale. Light and clean with a very pleasant taste. The
use of very little malt really brings the honey flavor forward without
becoming too mead-like. This is by far the most popular beer that I make.

3.5 lb. Light malt extract 3 lb. Honey |

Add 1 package of expired dried yeast to the boil. The high honey/low malt content makes for a lack of yeast nutrients.(Also add yeast energizer to the cooled wort) The boiled yeast gives those nutrients back. Add Irish Moss 15 min before finish. |

Log: | Fermented at ~67°F. This brew does well at almost any temp but the slower fermentaion produces a cleaner taste. I lager version might be worth trying but I think it would lose a lot of the "ale" flavor. |

Tasting: | I wonderful light honey ale. Very flavorful and refreshing. A hit with beer lovers and the "light lager" crowd as well. This is a complex ale that is best served cold. The honey taste really comes through. |
