Crazy Cat Light Summer Ale

I have made an attempt to formulate a light ale that Holly can enjoy
during the summer months. This may even spark an interest in our
crazy cat Gabi, who just might try some herself!

Beer: Crazy Cat Light Summer Ale Style: American Pale Ale
Type: Extract w/grain Size: 5 gallons
Color:
7 HCU (~6 SRM)
Bitterness: 36 IBU
OG: 1.035 FG: 1.008
Alcohol: 3.5% v/v (2.8% w/w)
Water: No water treatment in particular, just filtered and boiled
West Michigan tapwater.
Grain: 1 lb. American 2-row
1 lb. American crystal 10L
Steep: Crack grains and steep in 1.5 gallons of water at 150°-155°F
for 30 minutes. Sparge grains with 1 gallon of ~175°F water.
Boil: 60 minutes SG 1.044 4 gallons
4 lb. Light malt extract
Add malt extract and boil. Add hops per schedule. Irish Moss will be
added during the last 10 minutes of the boil. Wort will be cooled
using a wort chiller. I have a homemade counterflow type. It will
bring 4 gallons of 170°-190°F wort down to pitching temperature
in about 15 minutes. I highly recommend one. The additional boiled
water, that is still very hot, will be added into the boiling pot that
contains the hot wort so that it can be chilled as well. This would
be the water needed to top off the primary fermenter to the required
volume, less yeast volume.
Hops: 1 oz. Cascade (6% AA, 60 min.)
1 oz. Kent Goldings (5% AA, 30 min.)
1 oz. Liberty (aroma)
Yeast: Wyeast 1056 American Ale yeast
Flocculation low to medium; apparent attenuation 73-77%. (60-72°F)

Log: Ferment for 10-12 days, or until no signs of yeast activity
are present. Rack into secondary fermenter and dryhop per
hop schedule. Keep in secondary for 2-3 weeks before bottling.
Carbonation: 2.5 volumes Corn Sugar: 4.54 oz. for 5 gallons @ 72°F
