Lake Street Pale Ale

Alcohol: 5.4% v/v (4.3% w/w)
Water: Poland Springs Water
1 tsp. gypsum
Grain: 8 oz. American crystal 20L
8 oz. Dextrine malt (Cara-Pils)
Steep: Pour 1 gallon of water into a pot separate from your boling pot. Place crystal and cara-pils in a muslin bag and place into water. Bring the temperature slowly up to 180F. Remove grains when temperature hits 180F and place in a strainer over your boiling pot. Slowly pour steeping water over grains into boiling pot to get any remaining goodies.
Boil: 60 minutes SG 1.135 2 gallons
3.3 lb. Light malt extract
3 lb. Light dry malt extract
Add 1 gallon to the "tea" made from steeping the specialty grains bring the boil volume up to 2 gallons and bring to a boil.
Remove from heat and add malt extracts.
Put boiling pot back on heat and bring back to boil.
Add 1 tsp Irish Moss during last 15 minutes of boil.
Hops: 1 oz. Centennial (10.5% AA, 60 min.)
1 oz. Centennial (10.5% AA, 30 min.)
1 oz. Cascade (6% AA, 1 min.)
1 oz. Cascade (aroma)
Yeast: 1L starter made from Wyeast American 1056
Carbonation: 3/4 cup corn sugar boiled in 2 cups water for 15 minutes then cooled at bottling time.
