HOP POCKET

THIS IS MY VERSION OF A TRULY AMERICAN PALE ALE. I MAKE IT FOR HOP HEADS IN MY AREA OF THE WEST AND IF YOULIKE HOPS THIS IS YOUR BEER.

Bitterness: 41 IBU
OG: 1.051 FG: 1.008
Alcohol: 5.6% v/v (4.4% w/w)
Water: BURTONIZE YOUR WATER WITH GYPSUM OR WATER SALTS
Grain: 8 lb. American 2-row
.5 lb. American Munich
.25 lb. American crystal 120L
Mash: 80% efficiency
MASH YOUR GRIST IN 3 GALLONS OF WATER. REST FOR 1 HOUR AT 150F. SPARGE WITH 168 WATER TO YIELD 6 GALLONS OF WORT.
Boil: 90 minutes SG 1.039 6.5 gallons
Hops: .5 oz. Centennial (10.5% AA, 60 min.)
1 oz. Cascade (6% AA, 15 min.)
.5 oz. Centennial (10.5% AA, 15 min.)
2 oz. Cascade (aroma)
Yeast: FERMENT THIS BREW WITH AN AMERICAN STRAIN. WHITELABS CALIFORNIA ALE OR WYEAST'S CHICO 1056STRAIN WORKS GREAT TO KEEP IT CLEAN AND TO ALLOW THE HOP MALT BALANCE TO COME OUT RIGHT.
Log: I FERMENTED THIS FOR 4 DAYS AT 65F AND THEN RACKED IT TO SECONDARY AND CONDITIONED IT AT 55F FOR ADDITIONAL 4 DAYS. I THEN BOTTLE CONDITIONED IT WITH 7/8 CUP DME FOR 1 WEEK AND THEN COOLED IT TO 50F AND CONDITIONED IT FOR AN ADDITIONAL 2 WEEKS.
Tasting: THIS BEER WAS A SLIGHTLY CARAMELLY MALT BASED BEER. THE ORANGE HUED ALE FEATURED A HIGHLY CARBONDATED BODY BURSTING WITH HOPS IN THE AROMA AND ON THE BACK OF THE TONGUE. SLIGHTLY BITTER BUT AN AMERICAN HOP LOVERS DELIGHT. SERVES UP GREAT WITH A CREAMY WHITE HEAD THAT LAST TIL THE END OF THE GLASS!!!
