Water: | 8 Gallons of Spring Water. Add 1 tablespoon of gypsum to the sparge and strike water. Adjust with 88% lactic acid by eyedropper. | |||||||

Mash: | 85% efficiency | |||||||
Mash grains 155° F 3 gallon of strike water. Perform iodine tests until no starch present. Sparge with 5 gallons of sparge water at 170° for a boil volume of 6.5 gallons. | ||||||||
Boil: | 90 minutes | SG 1.058 | 6.5 gallons | |||||
Add 1 teaspoon of yeastex at beginning of boil. Add 1 tablespoon of irish moss at 30'. |

Log: | Ferment at 65° for 1 week in primary. Rack to secondary for 5 more weeks. Bottle at fg 1.012. | |||||||
Carbonation: | 1 qt of gyle from wort to kreusen. Boiled to sanitize. | |||||||
