Noble Golden Ale
Brewed this a while back as an experiment. It's essentially a pale ale with noble hops. After lagering in the fridge for a few months, the resulting beer is super clean, clear w/ a refreshing noble hop character.

This was before I got my large pot, so I only boiled 3.5 gallons, then topped off to five. | ||||||||
Hops: | 1.0 oz. Perle (6.8% AA, 60 min.) 1.0 oz. Hallertauer Tradition (6.5% AA, 15 min.) 1.0 oz. Spalt (6.0% AA, 15 min.) 0.5 oz. Hallertauer Tradition (6.5% AA, 10 min.) 0.5 oz. Spalt (6.0% AA, 10 min.) 0.5 oz. Hallertauer Tradition (6.5% AA, 5 min.) 0.5 oz. Spalt (6.0% AA, 5 min.) .5 oz. Hallertauer Tradition (aroma) .5 oz. Spalt (aroma) 1 oz. Yeast: | Danstar Nottingham. This was my first time using dry yeast. | |||||||
Log: | I fermented at a low temp. of 58 degrees for one week in primary, then moved to secondary for 2 weeks at 58 deg with whole Spalt for dry hopping. | |||||||
Carbonation: | 3/4 cup glucose for priming. | |||||||
Tasting: | This beer tasted grainy for the first month after bottling, so I let it sit in the fridge at 40 degrees for a couple months and forgot about it. After having one about a week ago I was surprised as to how good it has turned out. Good body from the carafoam, with a delicate Spalt flavor and aroma. Color is exactly what the recipator predicted and it's crystal clear. A tasty brew that is a nice change from the standard pale ale. ALthough it's 48 IBU's, the hops used really are smooth, clean and well balanced. My homebrew club enjoyed this one. |
