Water: From my friend's new well.
Grain: 20 lb. American 2-row
1 lb. German Vienna
1 lb. 8 oz. Dextrine malt (Cara-Pils)
1 lb. 8 oz. British crystal 95-115L
Mash: 69% efficiency
Single infusion at 153° to 151°. Mashed for 60 minutes.
Boil: 90 minutes SG 1.046 13 gallons
2 Tsp Irish Moss.
Hops: 1 oz. Kent Goldings (5% AA, 90 min.)
2 oz. Northern Brewer (8.5% AA, 90 min.)
1 oz. Cascade (4.4% AA, 30 min.)
.5 oz. Fuggles (5.5% AA, 15 min.)
.5 oz. Kent Goldings (aroma)
Yeast: 1056 from Turtle.
Carbonation: Chill wort. Add 25 psi for 48 hours. Then set at 5-8 psi for dispensing.
