Triple Berry Ale

This fruit Ale is great in the summer time on hot days in July.

Beer: Triple Berry Ale Style: American Pale Ale
Type: Extract w/grain Size: 5 gallons
Color:
12 HCU (~8 SRM)
Bitterness: 28 IBU
OG: 1.063 FG: 1.012
Alcohol: 6.6% v/v (5.2% w/w)
Grain: 1/2 lb. Wheat malt
1/2 lb. American crystal 20L
Steep: Steep grains @ 155°F for 30 minutes.
Boil: 60 minutes SG 1.063 5 gallons
6 2/3 lb. Extra-Light DME
Irish Moss - last 10 min.
Hops: 1.5 oz. Cascade (6% AA, 60 min.)
1 oz. Liberty (aroma)
Yeast: Starter preferred, but not necessary. White Labs - Australian Ale Yeast (WLP009)
Log: You will also need 9lbs. of berries. Use Blueberries, Rasperries, and Blackberries or Elerberries. 7 Days in primary. Pasteurize fruit in 150°F H2O for 20 minutes, adding just enough H20 to cover the tops of the berries. Pulverize fruit and add to secondary, ferment for 10-14 days. (Optional: add steeping water to secondary for extra aroma.) Rack to tertiary for 2-3 days for further clearing. Bottle and age for 10 days.
Carbonation: 3/4 cup of Corn sugar.
