although only a 5 minute boil with eroca hops because of the bitterness factor and because they were also in the ferment stage I would assume a higher ibu like maybe 20 |

Yeast: | cooper ale yeast started in the 4 oz of brown sugar water temp at 80F, covered and maintained temp at 77F, for 1 hour very active when added to primary. |

Log: | started march 05 2002, F.G reached 1012 in 48 hours ,racked into carboy for 2 days ,temperature of ferment average 75F,placed into corny keg with 1 half cup dextrose to prime for 5 days at 75F (achieved beside wood stove)finished with co2 isinglass optional at kegging .let it sit 2weeks | |||||||
Carbonation: | co2 infused for 6 hours at 10 psi in addition to the dextrose as mentioned above | |||||||
Tasting: | sampling done last night not too bad ! clear and clean with aa very nice malt after taste I expect flavour to mellow a bit more but I don't think it will last long enough . |
