I wanted to make a really hoppy APA - something like a Sierra Nevada Celebration Ale and Stone's Arrogant Bastard Ale. This one will be close.

Mashed in at 156 degrees and stabilized there for an hour. Raised to 170 during recirculation of the mash to mash off. | ||||||||
Boil: | 120 minutes | SG 1.037 | 15 gallons | |||||
I forgot the Irish Moss, even though I told myself not to forget it. Too busy cleaning as I brewed and playing darts. | ||||||||
Hops: | 2.5 oz. Centennial (10.5% AA, 90 min.) 2 oz. Fuggles (4.75% AA, 60 min.) 1 oz. Kent Goldings (5% AA, 20 min.) 1 oz. Tettnanger (aroma) |
